  3. For egg replacement, if you used flax meal, 2 tsp maybe? ..and soaked that till it’s slimy, that should work as the filler for an egg.

    Came up with my own version of a yummy Mock Chocolate healthy version Cake…..

    Recipe for MOCK CHOCOLATE CAKE 🙂


    3 tablespoons coconut flour

    2 tablespoons cacao powder

    2 tablespoons honey

    1 egg

    1 tablespoon coconut oil

    1/2 teaspoon vanilla extract

    1/4 teaspoon baking powder

    pinch salt


    Grease an 8-ounce mug with coconut oil, butter or cooking spray and set aside.

    Combine all ingredients in a small spouted cup and mix until you have a nice, rich cake batter.

    Transfer batter into prepared mug.

  10. I substituted almond flour with hazelnut meal I had lying around, and added 4-5 chocolate chips in the batter before I put the mug in the microwave. It was so good! Like eating a Nutella cake 🥰! Thanks for sharing the recipe

  12. Can I replace that almond flour with the usual wheat or potatoe flour? I really do not have almond flour around, it is not something commonly used, and if I am not into scalding, peeling and grounding almonds …. Or perhaps just ground hazelnuts instead?

I am allergic to artificial sweeteners (or more precisely, the additives the manufacturers put in them, I used regular white sugar (1-1/2Tablespoons) but may cut back a little more. Cooked them in a heavy cereal bowl since I didn't have a large mug and they were both perfect. Now I can't wait for strawberry season to top the vanilla cake. Yummy!!!
