If you place the jicama fries on a cookie cooling rack placed on your baking pan, you won't have to flip your fries and the will be crispy all the way around. I plan on trying the fish batter recipe. Thanks.
Looks fabulous! Good choice on the mayo. I LOVE good mayo. I grew up eating Best Foods ( same as Hellmanns, but for the western U.S.), but have recently discovered Duke's, and it's now my fave. I have tried quite a few "clean" mayos (Primal Foods, etc.). Can't stand them! Good quality "Dirty" mayo is just how I roll.

I just got some oat fibre for a different recipe, but as I am an English woman I am going to try out your batter recipe on some Haddock next week. I can't get jicama where I live, but just having battered fish and tartar sauce again would be lovely. I also wonder how it would work on chunks of cooked chicken to serve with sweet and sour sauce.
Love that you are doing jicama fries, very underrated..After boiling I put them in my air fryer, if you want to try something a little different put Zatar spice on them (it usually is used on roasted potatoes) -very good

A couple of questions. Does the batter have an egg taste? Can I use almond flour instead? I find most keto batters to have a strong eggy taste 😔

When you cook anything in olive oil at 400 or higher it oxidizes and is bad for you.

Looks good, but don’t the oatmeal raise your sugar, wouldn’t almond or coconut floor be better on insulin and keto.

A little baking soda/powder will help the batter and soda water or beer can introduce some air into it
