This looks so good, but I hate raw onion. I know it has so much flavour, so is the salad going to be bland if I just skip it? Is there anything else I could use to substitute the onions?
Love the added crunch! Our tradition has always been a bit of mustard, horseradish, chopped bacon, and pickles. Garnish with smoked paprika. Combining mine and yours would be heaven!
My eggs would brake if i do that since k get them out of the fridge, so what i do, I put them in a pot with rp water put them on the stove on med high for 15mins and they are perfectly hard boiled eggs.
I just wish there was a way to make these salads-including chicken & egg salad without the mayonnaise. I know they probably wouldnt be as good, but I dont like the added oil.

Very similar to our family's version. Try adding peeled, seeded & diced cucumber: it ups the veggie quotient and keeps it nice & light. A handful of frozen peas adds nice color, too.
This looks so good and I never thought of adding radishes to my potato salad, I will try this soon! I don't like potato skins, but like you, I always use red potatoes.

It looks very colorful but the radishes are very bitter tasting better off with dill relish instead of radishes do not bitter taste good in potato salad no no no no no no no no no no.
I’m clearly from the Midwest, my potato salad DOES use russet potatoes, diced onion, sweet relish, hard boiled eggs, yellow mustard, mayo and salt/pepper. That’s what I grew up eating, so to me it’s the best, but I will definitely give this a shot! I saw somebody in the comments mentioned adding capers, too, that sounds amazing!

I think it’s easier to make the Mayo dressing in the bowl, then add the other ingredients. I toss the hot potatoes with some cider vinegar too
