Just a health comment: unless you know your potatoes are organic don’t consume the skin. Potatoes are tested for high level of pesticides/ fertilizer chemicals in general.
I find it works better if you bake the potatoes first, they don't fall apart when you scoop out the potato, and you can scoop out more!
