  7. You definitely are the BEST. Cooking channel anywhere. I know this is great because this is exactly how I make mine. But your eclair recipe sure beats my OLD one. Your Eclair recipe is my recipe now. Your recipes are like the ones from days gone by, fairly simple and made with common ingredients that anyone can easily get any day. Good solid food real food.

  8. Aren't you supposed to cover the chicken in sauce? Otherwise they get completely burnt and juiceless on the sides. Chicken parm is more of a casserole, not a glorified schnitzel with cheese on top.

    I have a concerne regarding the oil your using : usually when frying, we prefer using sunflower oil or another oil that can handle high temperatures. I’ve seen that your using an extra virgin olive oil that has a smoke point that is below the temperature of your oil, causing it to smoke because it burnt. And you want to avoid that since it’s carcinogenic.
    You have all the info of the smoke point of the different oils on the internet. (Sorry for my english, I’m french)
