  5. Indian here. 100% accurate recipe. Traditionally we add paneer and dairy cream, but this is the best way to veganize it. Tomatoes are optional tho. My mum doesn't add them.

  6. Here's my method. I will try yours the next time I make it. Might bring out a different taste, which will be a nice change.

    1. Blanch the Palak (Spinach), which keeps the colour of the vegetable intact. Set it aside.
    2. No need to cook the tomato with the onions. So just cook them as you go step by step, just don't add the tomato and the spinach. Ohh and also no need to add the cream while cooking the onions, usually cooking cream in high heat breaks it off.
    3. Add your turmeric and chilli powder. I don't use garam masala, don't like this dish with a lot of spi9ces, simple is the best way.
    4. Cook all for a couple of minutes and then transfer it to a blender. Add the spinach, tomato and cream as well. With a bit of garlic, half a clove should be enough. Blend it.
    5. Now you transfer all to the same pan and cook it for a minute to incorporate the taste of each. Add the tofu or paneer (if you choose to do so). Cook for a bit and then you are done.

I forgot to take the tofu out of the freezer, so made basmati rice, and only had a big mix of greens, kale, chard and spinach, and I wasn’t sure but I thought I have to give it a try and cook these greens. Simply incredible. 680 grams of greens, plenty left to make again with the tofu when it thaws. Yum!! Thank you ☀️ Stay well 💙
