The sumac he used is most likely staghorn sumac. We use the heck out of it here in the southeast US. You see it mostly growing on the roadsides. Put the berries in a coffee grinder. We also make staghorn lemonade and it makes a great honey infusion. A single berry has about the same amount of vitamin C as an orange. Let me state that the berry is red or maroon, it cannot be confused with the poison sumac as it's berry is white.
