  2. Hi Yeung, I am so appreciative of the quick and easy recipes that you post on youtube. I am a newly found vegan and also a diabetic. I became vegan for the lifestyle change and to lower my A1c. I have lost 15lbs and went from diabetic to pre-diabetic, so it is still a process, but I am moving forward. I have not ordered your cookbook yet, but it is on my list to do so. I just want to say thank you for your quick, tasty, and easy recipes.

  3. This dish is incredibly easy to cook and delicious. What I love about it is its versatility. On my 2nd try, I made a few adjustments:
    > used pad Thai rice noodles instead of udon
    > added prawns
    > used baby kai lan instead of broccolini
    > made extra half portion of the sauce

    All worked out beautifully and tasted yummy. And this recipe is actually for 2 persons with medium appetite. Thank you Will for sharing this simple yet delicious dish. 🙏

  4. Yummm i made a huge batch of this stuff with soba noodle. the bean sprout + hoisin sauce combo reminded me of pho 😋 while the strong ginger taste made it its own.

  5. Hi Will, I made this today and it was delicious! I had yellow bell peppers and leftover sugar snap peas so I used those. I have fibromyalgia, and was craving something tasty.   8. Made this dish last night! Simply.ah-may-zing! I used broccoli instead and added more ginger, and BLUE turmeric for added antioxidants!! …first time ever using oyster Mushrooms…really nice, it peels like string cheese. .lol thank you!!

    I don’t usually like to cook Chinese noodles as I find them complicated with too many ingredients especially for one person.

  10. Now I know what I am having for dinner. I will have to add some chili though…….nothing better than that spicy, salty, sweet mix. I use Lotus Foods rice ramen noodles all the time! My market only offers two kinds and I use them both on the regular. I use the green ones and the brown ones. I can't think of the ingredients at the moment. Millet? Seaweed? Love them BOTH!
