Just so you know- I guarantee that every Mexican or Latina watching nearly had a heart attack watching you microwave those tortillas! 🤣 Some have left kind comments explaining why your tortillas are falling apart, but I promise you they were inwardly screaming! My dead mother in law might be crying somewhere in a corner of heaven right now. LOL. On a separate note- where did you discover the Dr Zevia?! I miss Dr Pepper but just found out I’m diabetic and can’t have soda anymore 😭
My favorite week night meal is Slap Yo' Mama Etouffe sauce with shrimp or crawfish (or chicken) over rice or cauliflower rice. Ready in 10 minutes. It is $5 for a jar and we use half per meal because there is only two of us, so I don't do it all the time.
I made the tacos and oh my gosh, they are amazing! My husband and I liked them so much we tried it again the next day but with chicken instead of beef. So good!!
Can we sauté the scallions/onions in sesame oil instead of using a different oil? I used 80/20 meat so I’m wondering how to cut some grease/oil (I don’t want to drain because I fear I’ll lose flavor.
Jess, your tortillas break apart because they are not hot enough. Try adding at least 30 more seconds to what ever time you are originally doing. Also, try heating them on a comal (griddle) no need to add oil if you do.
I highly recommend sauteeing corn ( frozen or canned) in either butter or olive oil with garlic and chopped green onions. So, so delicious. Salt and pepper as desired.

JESSICA! When you cut up your scallions, save the white root part and put it in a shot glass with water! They grow back! You’ll always have scallions!!!
Ok I tried this today with a 1/2 recipe and it was pretty good. I didn’t have scallions so I started with a 1/4 brown onion and a doret frozen garlic cube with avocado oil and kept to the recipe, and added about 2 tbsp sugar. A great addition is sprinkling the everything but the bagel seasoning from Trader Joe’s in the meat and on each taco as a garnish! I wish I had some Kimchi for them!
If you don't want your corn tortillas to fall apart, nuke 8 for ~80 seconds (1200watt microwave), wrap that paper towel in plastic wrap. So they can keep steaming. Or get a microwave tortilla cooker thing. 30 seconds is not long enough. Otherwise, cook them in a pan on the stove top for about 40-45 seconds per side. Corn tortillas require actually being cooked to not fall apart. 🙂
Get in the habit of turning your pot handles away from the edge of the stove so GiGi doesn’t grab at them and pull hot water on herself. Sorry to be bossy, but that about gave me a heart attack, seeing her in one frame and then the boiling water pot handle hanging over the edge in the other.
Throw some of that white wine in that Mac & Cheese while you’re at it. Yum yum!
Hey again Jessica! Just wanted to let you know the tacos were a HIT at our house! My 15 year old said he could have eaten 7 of them 😳 even our picky 12 year old ate one and totally made another! Shocked! We WILL be making this again next week cuz no one got their fill. Everyone just thought they were amazing!! LOL. Thank you again so much!!

He’s at the store getting the stuff for the Mac n cheese for Sunday right now 😁 we got a free 10 lb spiral honey ham from our points at the store (large family, growing teenage boys…need I say more? We have to shop a lot!) so we are going to use ham in place of the chicken in the Mac n cheese. I figured that would be a good way to use some of it. Thank you for sharing the recipe. So far we made the tortellini soup and it was delicious!! So thanks again!

I’m a notorious picky eater but all these dishes look delicious and are foods that I would eat. Excited to make them for some of my meals. 😊

put the corn tortillas on a dry skillet for ~30 seconds per side to prevent them from breaking super easily 🙂

The meals look amazing! My favorite part had to be Pinocchio looking up and watching you make the grown-up mac n cheese. He was is so adorable!
Scallions and green onions are not the same thing. People make that mistake a lot but they are different

Instead of boursin you could use cream cheese (philadelphia or the store equivalent so much cheaper!) or quark with added herbs in!
