  1. Nikki, thanks so much for all your Trader Joe product tips and recipe ideas to go with them. I especially love the Organic Creamy Cashew Fiesta Dip. My husband has been yearning for vegan pizza and I finally made him some today using the Fiesta Dip as the cheese topping. I just warmed it and spread it over the top before baking. I have to tell you he was in heaven…. Also, the other day I cooked some small whole yellow potatoes in my Instant Pot; we smashed them a bit with a fork and then topped them with the Dip. Amazing…and so simple. I’m looking forward to trying lots of your recipes, as well as viewing more of your videos.

  2. I make a wheat pasta loaded with tomatoes, brocolie, stewed carrots and diced green olives. The "mayo" is lite ranch and honey dijon mustard. I realize that they are not vegan, but for right now, it's the best I can do. Really- ANY veggie you like is okay.

  4. not trowing shade because i totally love you!!!! bbbuutttt i never understood the purpose of frozen cauliflower rice in a plastic bag..its easy to buy a full head and throw it in the processor (or chop it by hand) until its rice size,, BAM freeze in a reusable bag or container ! xo

  5. I love the fact that you don’t spend time chopping and other things that take up so much time on theses cookings shows BUT I do wish you would give the recipes ~~~~

  6. I definitely want to try your eggplant hummus bc I've looked quite a few times and they don't seem to sell it in St. Louis. Not sure if it's just a west coast thing or not.

  7. Nutritional yeast, coconut milk/cream, bananas(I'm really into smoothies and rotten bananas add the sweetness I like). Loved this video, lots of great ideas. 💜

  8. My constant staples are: Bananas, organic frozen berries, Dave's Killer Bread (21 whole grains & seeds), and Amy's organic lentil soups in the can. My favorite treat is the TJ's dried spiced chile mangos or their herb flavored popcorn.
